Paella is a traditional dish of Spain. Its home is Valencia, but variations exist in the different Spanish provinces. A colorful mixture of saffron-flavored rice and various meats and seafood, paella’s name comes from the paellera, the flat, round pan in which it is cooked.
Tapas originated in Andalucia in southern Spain, but are now popular all over the world. The word 'tapa' actually means lid, for in past times every glass of sherry bought in a local Spanish bar would come covered by a slice of bread topped with ham, cheese or fried black pudding to keep out the flies.
